Should I paint the inside face of the door to match or contrast?

That's entirely your preference. Many people match the interior trim color on the inside face and use the bold color only on the outside. We can do either or both.

Can you paint the door while it stays hung?

Yes, but it takes more care to avoid runs on vertical surfaces. Taking the door off its hinges gives a better result for panel doors and is worth the small extra effort.
